The [Easter] Weekend

I love a good long weekend! I wish they happened more often. This weekend was busy but fun. Friday we slept in and made breakfast together and had mimosas – wish we could do that everyday. We got an America’s Test Kitchen cooking for two cookbook during our engagement so we decided to finally dive in and cook a couple of recipes from that book. We chose something simple since we were making breakfast and went with their way of cooking scrambled eggs and also homemade pancakes. I have to say, I think we made a pretty good team in the kitchen. The breakfast turned out fantastic and it was a reminder of why I love America’s Test Kitchen so much.

We saw Fast & Furious 7 – full of action and sort of made me sad at the end. I got a [much needed] haircut Saturday and ended the weekend with a trip to Nashville with the in-laws for Easter and had a fantastic Easter brunch together. Oh! How could I forget, we saw Last Comic Standing winner, Rod Man, at a local comedy club. So. Funny. Until the most recent season, John and I had never watched Last Comic Standing…I’m actually not sure how we got into it but since the beginning we were huge fans of his. It was nice to see him win and see him live!

So let me explain these eggs: they’re turkey eggs. We bought them at the farmer’s market last week. They were tasty…a little larger than a normal chicken egg and the yolk is definitely larger. Now I can check that off of my bucket list.

Great weekend. We *finally* made a decision regarding a vacation we’re taking next month. More details on that at a later date. Promise.
